Antipasto
1/2 small head cauliflower, separated into tiny flowerettes
1 8 oz jar olives with pimento, drained and sliced
1 8 oz jar sweet pickeled onions, drained and chopped
32 oz bottle ketchup
1/2 c olive or corn oil
1/4 vinegar
2 cans 7oz chunk tuna drained
1 can sliced mushrooms drained
1 can 70z small shrimp drained
3 green peppers chopped
In large saucepan, pre cook cauliflower for 5 minutes and drain. Add olives, onions,
ketchup, peppers, oil and vinegar. Simmer gently for 10 minutes.
Add tuna, mushrooms, & shrimp. Simmer gently for 30 minutes. Bottle &
refrigerate.
Makes about 2 quarts.
