Spaghetti All Amatriciana
Traditional Quick & Easy Pasta Dish
Spaghetti All"Amatriciana
This is a traditional and popular Italian pasta dish originated in
"Amatrice", a small town east of Rome between the Abruzzo and Umbria
border.close to my mother's roots! Like many pasta dishes, this is quick and
easy to prepare and full of good ol' Italian flavor. (not to mention, that
bacon, again!)
(Spaghetti with bacon, tomatoes and wine)
1/2 pound spaghetti
2 Tbsp. olive oil
1/4 pound pancetta (Italian cured bacon) or bacon, chopped
1 garlic clove, minced
1/2 cup onion, chopped
1 cup tomatoes, peeled
1/4 cup chicken broth
1/4 cup red or white wine
1 tsp. Chili pepper
salt and pepper to taste
pinch of basil
Parmesan cheese, freshly grated
fresh Italian parsley, chopped
Cook spaghetti according to directions or until al dente. In large skillet, heat
oil and saute bacon, garlic and onions until light brown. Add remaining
ingredients except cheese and parsley and simmer on medium heat for 15-18
minutes, stirring occasionally. Drain pasta and toss well with sauce. Add
Parmesan and parsley and serve.
Serves 2 - 4 (I usually double this recipe to serve a family of 6.)
