Portuguese Sweet Bread

Portuguese Sweet Bread

For 1-1/2 lb. loaf

5/8 to 3/4 c. water
2 eggs
4 tbs. butter or margarine
1/3 c. sugar
1-1/2 tsp. salt
3-1/4 c. bread flour
2 tbs. non-fat dry milk powder
1 tbs. gluten (optional
2 tsp. active or instant yeast

Add ingredients to pan in your machine's preferred order. Use least amount of
water first.
Observe dough as it kneads. If it appears dry or stiff or machine is straining,
add more water 1 tbs. at a time until dough forms a smooth, pliable ball that is
only slightly tacky to the touch. (Dough should not stick to your fingers)
When baking cycle is done, remove bread from pan, place on cake rack, and let
cool one hour before slicing.
