Date and Mascarpone Spread
This is the second recipe for Mascarpone.
Date and Mascarpone Spread
4 oz. Mascarpone Cheese
4 0z. Dried Dates (pitted)
Place dates in a small sauce pan. Add just enough water to cover the
dates. Simmer the mixture until almost all the water has evaporated.
Careful not to burn the dates. Transfer the mixture to a mixing bowl and
cool to room temperature.
Rough chop the dates. Blend in the mascarpone, mixing until thoroughly
incoporated. Chill.
Notes: Excellent on toast, bagels or tea breads. Any dried fruit may be
substituted for dates.
