Fruit and Cheese Fondue
All came from Favorite Cheese Recipes from Family Circle (September 1975 edition). I've
tried all of them when fondue was very popular in the late 70's. They are all very
good.
Fruit and Cheese Fondue
2 T butter
2 T flour
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 c milk
2 c shredded Cheddar Cheese (8 oz)
1/3 c crumbled blue cheese (about 2 oz)
Melt butter in a large suacepan; stir in flour, salt and nutmeg to form a smooth
paste. Remove from heat; gradually stir in milk.
Return to heat and cook over medium heat, stirring constantly, until smooth and thickened;
continue cooking and stirring 2 minutes longer.
Remove from heat; stir in Cheddar and blue cheese. If necesary, return to heat to
finish melting cheese, bu do not boil.
Pour melted cheese mixture into fondue pot; keep warm. Serve with sliced apples and
pears, orange sections, melon chunks/balls,
pineapple wedges or grapes. Spear fruits with long-handled fondue forks and dip into
the cheese mixture. Serves 6 to 8.
