Proscuitto and Mascarpone Pinwheels

To those of you who requested more mascarpone recipies. I obtained these from Chef Tim since I personally don't have any more.
 
First one is an Appetizer.
 
Proscuitto and Mascarpone Pinwheels
Serves 6  Prep. time 30 minutes
 
2 oz. proscuitto---sliced thinly but evenly
4 oz. mascarpone cheese
3 stalks of scallions---finely chopped
1 red bell pepper-----seeded and finely chopped
 
Slightly beat the mascarpone so that it can evenly be spread. Add the chopped scallions, and pepper.
Spread a piece of plastic wrap on a work surface. "Shingle" the proscuitto onto the wrap. Spread the mascarpone mixture evenly on top of the slices. Roll the proscuitto up jelly roll style and wrap tightly in the plastic wrap.
Refrigerate until firm.
To serve, unwrap the roll and slice.
 
Notes:  Excellent on toast points, crackers or pita chips.  May be prepared ahead and refrigerated until ready to serve.
