Swiss Fondue
Swiss Fondue (my favorite)
6 c grated Swiss cheese (1 1/2 lbs)
3 T flour
1 clove garlic, halved
2 c dry white wine
3 T kirsch
paprika
1 loaf Italian/French bread
Toss the grated Swiss cheese with flour in a large bowl. Rub cut ends of garlic
around bottom and side of a fondue dish or large heavy frying pan; pour the wine into the
pan. Heat very slowly just until bubbles start to rise from bottom of pan.
Stir in cheese mixture, a small amount at a time, with a wooden spoon. Do not let mixture
boil at any time. Stir in kirsch. Sprinkle with paprika.
Cut bread into small pieces, leaving some crust on each; place in a basket. Set out
fondue forks to spear a piece of bread then twirl into the simmering cheese sauce.
Serves 6.
