Chocolate Carrot Cake

I found this cake recently not sure where, but this is as I have saved it to my
computer: Hope it is what  you wanted.  I have not tried the recipe, but it
looks good to me. I believe you could substitute all purpose flour for the whole
wheat if you preferred. Wilma

Title: Chocolate Carrot Cake

Yield: 6 servings

1 1/2 cup Finely grated carrots
3/4 cup Granulated sugar
1/2 cup Canola oil
1 cup Boiling water
1 1/2 cup Wholewheat flour
1/2 cup Unsweetened cocoa powder
1 tsp Cinnamon
1 1/2 tsp Baking powder
1/2 tsp Salt
Pre-heat oven to 350 f.

In a large bowl, combine carrots, sugar & oil. Pour water
over the mixture. In a separate bowl, combine the rest of
the ingredients. Add to the carrot mixture & mix well. Pour
into a non-stick or lightly oiled 8" square pan. Bake for
35 minutes. "Vegetarian Times"
