Citrus Poppy Seed Delight Cake
1-1/3 cups Orange Juice
1/2 cup Canola Oil
3 Eggs
1 Lemon Cake Mix
1-1/2 to 2 Tbsp. Poppyseeds
Preheat Oven to 350 degrees
Spray a Bundt pan liberally with non-stick spray, then flour, banging
excess out of pan. Using electric mixer, beat together orange juice,
oil and eggs. Add cake mix to batter. Mix on low speed of mixer for 2
minutes, scrapping down sides of bowl. Continue to mix 2 minutes on
high speed of mixer. Fold in poppy seeds by hand. Pour batter into
prepared pan. Bake 30 to 35 minutes on middle rack position of oven.
Check for doneness by sticking tooth pick in center and if it comes out
clean cake is done.
Let cake mix sit in pan for 10 minutes, then invert cake on cake plate.
I like to tap bottom of pan all over before lifting gently off cake.
When cake is barely warm poke holes in cake with meat fork.
Mix Together:
1/3 cup Orange Juice
2 cups Powdered Sugar
2 tsp. Oil
Pour slowly over warm cake so it has a chance to penetrate cake.
