Casserole of Root Vegetables
I saw a recipe for rutabagas -- but I missed the request if there was
one. In case this is useful or of interest -- it is a family favourite
Casserole of Root Vegetables
Cut into julienne (matchstick) strips about a cup of each of the following
1 cup Rutabaga
1 cup Carrot
1 cup Parsnip
1 cup Kohlrabi
You could also add other root vegetables to taste, including potato, Jerusalem
artichoke, sweet potato
Put in a casserole with
1 Tbsp Butter (dotted on the top)
1 cup chicken stock
Salt and pepper to taste
Put in a 350 oven for an hour. Check from time to time to see that the liquid
is not drying out.
