Lowfat Chicken Spinach Elegant
2 boneless, skinless chicken breasts split in to four servings
Stouffer's Spinach Souffle, partially thawed
1/2 cup Fresh Slice mushrooms
4 Slices of Swiss or Provolone Cheese
Preheat oven to 350 degrees Pound each chicken piece to flatten a bit. Sprinkle
each chicken breast with salt and pepper. Place in glass or metal baking dish.
Place mushroom slices on each breast. Divide Spinach into four pieces and place
one on top of each chicken piece. Cover with a slice of cheese. Bake for 40
minutes
Note: Stouffer's Spinach Souffle is abouyt 2 cups of frozen spinach in a light
cream sauce.
