 4                cups   black turtle beans -- soaked overnight
                       water -- to cover
    1/4           cup   olive oil
 2                      onions -- coarsely chopped
 4             cloves   garlic -- chopped
 2        tablespoons  ground cumin
 2        tablespoons  oregano
 2        tablespoons  chili powder
 2                      bay leaves
 4             pounds   tomatoes -- with juice,
                       coarsely chopped
 6                cups   chicken stock -- (6 to 8)
 2          teaspoons  salt
                       fresh cilantro -- chopped for garnish
                       sour cream -- for garnish

  Put black beans in a pot with water and bring to a boil.
Reduce heat and let simmer for 1 hour (beans should be almost
soft). Drain, rinse and set aside.
  In a heavy bottomed soup pot heat olive oil over low heat and
add onion, garlic and spices. Cook, covered, until onion is
translucent, about 10 minutes.
  Add remaining ingredients, except beans, stir and bring to a
boil, then add beans to pot. Return to a boil, reduce heat and
cook, partially covered, for 2 hours.
  Serve with a dollop of sour cream sprinkled with the fresh
cilantro.
