House of Commons Chili
This is one of the best chili recipes I know. We call it:
House of Commons Chili
because it was brought to a cast party (after a play) by the actor
playing an MP!
3 onions
3 Tbsp oil
1 lb. minced beef
15 oz. can tomatoes
6 oz. can tomato paste
1/4 cup water
1 tsp chili powder (or more to taste)
1 tsp dry mustard
1 tsp minced garlic
2 tsp salt
1 tsp sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
2 bay leaves
Slice the onions finely and sauti them in the oil until tender but not brown.
Remove the onions from the pan. Add the beef and brown it; remove the excess
fat. Return the onions to the pan. Add tomatoes and tomato paste. Blend the
spices in the water. Add to the pan with the bay leaves. Simmer for one hour.
