Flourless Chocolate Cake with Oranges
1/2 cup orange juice
1 1/3 cups sugar
6 ounces unsweetened chocolate
6 ounces bittersweet chocolate
9 tablespoons room temperature butter
5 eggs
8 navel oranges
1/4 cup Grand Marnier or other orange liqueur
powdered sugar
Heat oven to 325 degrees F. Butter an 11x17 inch baking sheet with 1/2 inch
sides, line with parchment paper and butter the paper. Bring orange juice to a
boil in a medium saucepan and add 1 cup sugar. Remove from heat. Break up
chocolate and add, stirring till chocolate has melted and mixture is smooth.
Add butter a little at a time. Stir well and set aside. Beat eggs with
remaining sugar for 12 minutes till very thick and light. Gently fold 1/3 of
eggs into chocolate mixture. Fold in the rest of the eggs. Spread batter into
prepared pan and bake 15 minutes till set. The surface of the cake will have
dulled somewhat and will have become firmer to the touch. Allow to cool
completely in the pan. Meanwhile remove all skin and pits from oranges.
Separate sections and toss with liqueur. Refrigerate. Run a knife around the
edge of the cake in the pan. Place a large flat baking sheet over cooled cake,
invert, then lift off baking pan. Peel parchment off cake. To serve, heat oven
to 150 degrees F. Cut large squares of cake and, using a wide spatula, place
each on an ovenproof plate. Place in the oven to warm for about 5 minutes.
Arrange orange sections and a little of their juice in a decorative pattern on
the cake or around it. Sift a little powdered sugar over the top and serve.
