Molasses Cookies
This recipe comes from the label of a molasses bottle years ago
(probably Brer Rabbit). My mother has made these every Christmas,
and swears that all men love them.
Molasses Cookies

3/4 cup Crisco
1 cup sugar
*1/4 cup molasses
1 egg
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
Melt Crisco over low heat. Set aside to cool. Add molasses, sugar and
egg. Beat well. Sift together dry ingredients, then add to first
mixture. Mix well, then chill for one hour. Form in 1-inch balls, dip
in sugar, and place on greased cookie sheet, 2 inches apart. Bake at
350 deg F for 8-10 mins.
Note: if you roll the cookies in sugar, the bottoms may burn, but the
cookies won't spread out so much--they'll be thicker and chewier. Here
in Florida, molasses cookies absorb moisture regardless of how crisp
they start out, so they're always chewy. They freeze well.
