almond roll lace cookies
Here's a recipe for almond roll lace cookies:
2/3 C. blanched almonds, ground fine
1/2 C. butter
1/2 C. sugar
2 T. milk
1 T. flour
Preheat oven to 350 deg. F. Grease and flour well a large cookie
sheet (non-stick works well). Combine all ingredients in a large
skillet. Heat, stirring, until butter is melted and mixture is
blended.
Drop mixture by heaping teaspoonsful onto the cookie sheet, only four
to the sheet, and 2 inches apart. Bake 5-6 minutes, or until golden.
Remove from oven, and as soon as cookies begin to "set," lift, one at
a time, with a broad spatula and quickly roll around the handle of a
wooden spoon. If cookie gets too hard to roll, reheat in oven a
minute to soften.
Serve lightly dusted with confectioners' sugar. May be frozen up to 2
months. (I never froze any because they break so easily.)
These really are great, easy and impressive.
