Maryland Crab Cakes

Amount Measure Ingredient -- Preparation Method

1/2 tsp garlic -- minced
1 tbsp onion -- minced
1 tbsp celery -- diced
2 tbsp mayonnaise
1 whole egg
1/8 tsp salt
1/8 tsp blac pepper
1 tsp dijon mustard
1 tsp Old Bay Seasoning
1/4 cup bread crumbs
1 lb lump crabmeat or dunganess crab meat
2 tbsp oil for sauteeing

In large bowl, combine all ingredients, except crab meat and bread
crumbs. 
Gently mix in crab, then bread crumbs. 
Spread thin layer of bread crumbs on work surface.
Form mixture into equal balls(8) of 2" in diameter. Form cakes about 1/2
inch in thickness and 3 inches in diameter.
Refrigerate for at least one hour.
Heat two tablespoons of oil in skillet until hot.
Sautee cakes two at a time. Cook for two minutes on first side. Turn and
cook for another five minutes, reducing the temperature to low.
