CREAM of CRAB SOUP

CREAM of CRAB SOUP

1 1/4 sticks of butter 2 lbs. crabmeat
2 c. whipping cream 1/2 c. scotch
2 T. flour 8 c. milk
Dash of hot sauce and salt and pepper to taste.

Melt 1/2 c. butter over medium heat in a large sauce pan. Add crab
and saute' til heated. Add cream and cook til almost hot..DO NOT BOIL!
Stir in scotch and remove from heat. Melt remaining butter is small
pan. Add flour and cook 2-3 minutes, whisking. Whisk in 1 c. milk
and continue cooking til medium thickness. Blend sauce into crab.
Add hot sauce with the remaining milk. Cook til very hot over medium
heat. Serves 6-8 people depending on servings. It's very rich and
very good!
