Roast Crab

A- 1 large ocean crab or 2-3 medium freshwater ones per person, 
preferably alive but frozen is okay.

- if bought alive, this is the humane way to kill it (throwing any 
living thing into a boiling pot of water is _VERY_ CRUEL): one hand grabs 
the 2 claws, the other one grabs the back shell, in one swift movement, 
yank the crab into two parts. This will kill it instantly and without 
suffering as in the boiling water.

- wash the crabs (bodies and shells) in cold running water and remove 
all gills.

- meanwhile bring a large pot of water to a rolling boil (put a chunk 
of ginger the size of a pinkie in there if one prefers).

- throw the crabs into the pot and keep the water boiling for about 20 
minites or until the crabs turn bright orange.

- for each crab use 1 tablespoon of salt, some freshly cracked pepper 
and completelt wet the mixture with lime juice.

- enjoy the crabs by using your fingers (a nutcracker can be very 
helpful if one doesn't have strong fingers) to crack open the claws and 
the body to get at the crab meat. Slather the meat with the salt/lime 
concoction before dump it down one's throat.

- drown it with some cold, light Mexican beer (such as Tecate), 
althought I've tried it with strong, hearty stout (a pint of Guiness is 
the best) and loved it too.

- don't forget to lick one's fingers.
