   2      large          apples -- peeled and cubed
   2      tablespoons   cold water
   1      tablespoon    butter
   1      cup            cherries -- stemmed and pitted
   1 1/4  cups           berries
   2      tablespoons   brown sugar
   6      ounces         Havarti cheese
                        --Crust--
     1/3  cup            cold butter -- cubed
   1      cup            all-purpose flour
     1/3  cup            brown sugar
   1      pinch          salt

For berries, use blueberries, raspberries, blackberries, whatever you like.

In a saucepan over low heat, cook the apples with the water uncovered, 7 to
8 minutes. Butter a 2-quart baking dish. Pour in warm apples, berries and
the cheese. In a large bowl, place flour, brown sugar and salt. Rub in the
butter until mixture resembles coarse sand. Sprinkle fruits with brown
sugar and cover fruit with crust mixture. Bake at 350 degrees F for 25 to
30 minutes or until golden. Serve warm with creme fraiche or ice cream.
