Coconut Fudge Naryal ki Barfi
Serves 10
1 cup milk
2 Tbsp veg. oil
2 cups sugar
1 coconut, shelled and grated
1 tsp. ground green cardamom
Lightly grease a medium size shallow baking pan or cookie sheet. In a large
saucepan, bring the milk and oil to a boil over medium heat. Stir in the sugar
and add the grated coconut and cardamom, stirring constantly for 6-8 minutes,
until the coconut becomes thick and glazed. Remove from the heat and pour into
the baking pan. Cool, cut into squares, and serve.
