Divinity
Here is a Pillsbury recipe for divinity:
2C sugar
1/4t salt
1/2C hot water
1/3C light corn syrup
2 egg whites
1t vanilla
1/2 to 1C chopped nuts
In medium sized heavy saucepan, combine sugar, salt, water, and corn syrup. Cook
until mixture boils, stirring constantly. Cook uncovered without stirring
until candy thermometer reaches hard ball stage (250F)*. In large bowl,
beat egg whites until stiff peaks form. Pour syrup over egg whites in
steady FINE stream and continue beating until mixture hold its shape and loses
gloss. Stir in vanilla and nuts. Drop by teaspoonfuls onto
waxed paper. Makes 1lb.
P.S. In case you have not made candy before, you do NOT need a
thermometer. You can tell if you have reached hard ball stage by dripping
a drop of the syrup into a glass of COLD water. Hard ball stage is when
the drip makes a hard ball in the water. Soft ball = soft: Hard
crack is beyond hard ball and results in a hard string like result. Anyway, just
incase you wanted to know.
