Easter Bunny Cake

If you can find a low-fat cake recipe, you may want to try out this idea for an Easter Bunny cake.  It's a really big hit with kids.  Bake a cake in 2 round cake pans.   When the cake has cooled, cut one of the cake rounds in such a way that you come out with 3 pieces (2 small bunny ears and the center piece becomes a large bow tie).   The other cake round is left uncut and will be used as the bunny's head.   Assemble all parts on a a cookie sheet.  Frost entire cake with low-fat frosting (lite whipped cream maybe).  You can decorate anyway you want.  I generally cover the bow-tie with jelly beans, put some pink frosting in the center of the ears, use coconut to get the furry effect (but fattening),  jelly beans for eyes and nose, thin black licorice works well for wiskers, mouth and eyebrows.  I wish I could send you a picture, it's really cute.

PS - If you can't find thin black licorice, you can use the regular licorice and cut it thin with a scissors.
