Kahlua Chocolate Mousse
Makes 8 servings.
5tsp kosher gelatin
1/4c cold water
1/3c unsweetened cocoa powder
1c water
1/3c Kahlua
1/4tsp salt
1-14oz nonfat sweetened condensed milk
1tsp vanilla
1 1/2c lowfat whipped topping
8 chocolate-covered coffee beans (optional)
Combine gelatin & cold water & set aside to soften, about 3min. In saucepan, mix
cocoa, water, Kahlua, salt & softened gelatin. Stirring often, bring to boil over med
heat. Boil for 2 min, stirring constantly. Remove from heat. Pour choc mixture in med
bowl, add milk & vanilla & mix well. Chill1 hr, stirring occasionally. Set aside
1/2c whipped topping. Fold remaining topping in chocolate mixture. Divide mousse b/t 8
dessert cups. Refrigerate for 1hr. To serve, decorate with dollop of reserved topping,
& choc-covered coffee bean, if desired. PER SERVING: 236.1 CAL (11% from fat),
