Peanut Butter Easter Eggs

1/2 cup peanut butter
3 Tbsp butter, softened
1 cup sifted powdered sugar
8 ounces chocolate flavored candy coating  Chocolate chips will work also

In a mixing bowl, stir together peanut butter and butter. Gradually add the
powdered sugar stirring until combined. Shape into eggs and place on waxed
paper. Let stand until dry (small balls takes about 20 minutes. Melt candy
coating. Cool slightly. Dip the eggs into the chocolate, let excess drip off.
Place on waxed paper until coating is firm. Store tightly covered in the
refrigerator.  Makes about 30 candies   Jan

When I am using a chocolate coating for dipping candy, I always add a small
amount of paraffin and melt it along with the chocolate, it gives the coating a
shine.

[Mod: Please do not write the moderator about the addition of paraffin in this
recipe. As of 1993, "Paraffin is not a FDA approved food additive". Check out
http://foodsafe.fshn.msu.edu/resources/faq/ for some more info on mixing it with
chocolate. Another product called Bakers Wax, available from confectionary
stores, is a good substitute.]
