     1/2            cup  sugar
     1/4            cup  water
     1/8      teaspoon  salt
     1/4      teaspoon  cream of tartar
  4                      egg yolks
  1                 cup   ground pistachio nuts
  1           teaspoon  almond extract
     1/4      teaspoon  green food coloring
  4                cups   heavy cream

In a saucepan, combine sugar, water, salt and cream of tartar. Boil for 5 min.
While beating egg yolks vigorously, slowly pour sugar syrup into them. Add nuts,
almond extract, food coloring and cream to the sugar-egg mixture. Churn-freeze.
Makes 1/2 gal.
