Rhubarb Meringue Pie

I found several recipes for you, my only regrate is that I can't be there to help you eat it. We don't get rhubarb here in Texas. It was always one of the things I looked forward to when I was a lad, Miss it but I do have some good recipes handy just in case.

 Rhubarb Meringue Pie
2 cups rhubarb  2 eggs yolks
2 tbs flour  1 cup sugar
1/4 tsb salt
Meringe 
2 egg whites  4 tsp sugar
1/4 tsp baking powder
 
Wash rhubarb and cut in 1/4 inch pieces. Put in colander and pour boiling water over rhubarb and drain. Seperate eggs and add sugar which has been mixed with flour and salt. Mix well. Pour into well greased pie pan and bake in a 350 degree until firm, about 45 minutes.
 
 
Meringue
Beat egg whites until frohy. Add 1/4 tsp baking powder and beat until stiff the fold in 4 tsp of sugar.
Cover pie with the meringue and put in oven until merinqur browns.
