                        Basic Rich Pie Crust
  3                Cups   Sliced, Canned Pears
     1/2            Cup  Sugar
  1         Tablespoon  Cornstarch
     1/8      Teaspoon  Salt
  1                 Cup   Sour Cream
  1           Teaspoon   Vanilla Extract
     1/2      Teaspoon  Almond Extract
                        TOPPING:
     1/2            Cup  All Purpose Flour
     1/3            Cup  Sugar
     1/4            Cup  Butter

Prepare dough for crust and chill. Preheat oven to 375. Drain pear slices
thoroughly.

In a medium bowl, combine sugar, cornstarch and salt. Blend in sour cream,
vanilla and almond extracts. Add pears and gently toss, using a rubber
spatula, to coat pears.

On a floured surface roll out 1 piece of chilled dough into a 13 inch round.
Ease into a 9-inch pie pan. Flute pie edges. Arrange pears and sour cream
mixture in the pie shell. Cover pie edges with foil. Bake 25 minutes.

While pie is baking, make topping. Remove foil from pie. Sprinkle topping
evenly over filling. Return to the oven and bake 25-30 minutes or until
topping is very lightly browned and juices from the filling just begin to
bubble up. Cool pie on a wire rack. Serve slightly warm or chilled. Store in
the refrigerator. Makes 1 9 inch pie, 8 servings.
