Walnut Crunch Pudding
Walnut Crunch Pudding
1 cup sugar
1 cup chopped walnuts
1 egg, beaten
1 pkg instant vanilla pudding mix
1 cup dairy sour cream
1 cup milk
2 medium bananas, sliced
Combine sugar, walnuts and egg. Spread thinly on greased baking sheet.
Bake
at 350F for 18 - 20 minutes or until golden brown; cool to room
temperature.
Crush baked nut mixture; sprinkle half the crumbs in bottom of 8 x 8 x
2-inch baking pan.
Combine pudding mix, sour cream and milk; beat on low speed of electric
mixer or with rotary beater 1 - 2 minutes or until well blended. Fold in
bananas. Spoon over crumbs in pan; top with remaining crumbs. Chill
several
hours before serving. Cut in squares; garnish each square with a walnut.
Yield: 9 servings.
