Pat's Country Apple Cake
Last year, I posted some recipes from my friend Pat. She is a full time worker and
specializes in recipes that are fast, easy and
extremely tasty. If they don't fit this criteria, she doesn't mess with them. Here is
another of her fine recipes. It is so good,
and not too sweet. It is SPECIAL.
Pat's Country Apple Cake
3 cups flour
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 cups sugar
3 cups chopped, peeled apples
3 eggs
1 cup coarsely chopped nuts
1 1/2 cup vegetable oil
2 tsp vanilla
Mix sugar, oil, eggs and vanilla. Stir together dry ingredients. Mix the wet and dry
ingredients and then stir in nuts and apples. Place in 9 x 12 x 2 glass baking dish.
Sprinkle top with cinnamon. Bake at 350 F for 25 to 40 minutes,
until cake begins to pull away from the sides of the pan.
A simple glaze can be applied, but we think that it would be
gilding the lily. It is great the way it is.
