Pineapple Squares

Okay here is my all time favorite for pineapple squares.
theres many variations . this is superb.Note the use of
yeast. It gives a special quality to the dough when used
below as directed. I have not seen many recipes using yeast
for pineapple squares and I think this is splendid.If you
do try it let me know!
 
Joan's Pineapple Squares
 
3 cups flour
1c oleo
3 egg yolks
2/3 c warm milk
2 tb sugar
1 pkt dry yeast
1 ts vanilla
filling: 2 cans pineapple pie filling
            " or "
1 lb. 14 0z can undrained crushed pineapple
3 tbs cornstarch
1/2 c sugar
1 egg yolk
 
Procedure: Cut oleo into flour as for pie dough until pea
size crumbs. Dissolve yeast in warm milk. Add sugar,
vanilla and egg yolks. Add to flour mixture and mix well.
Knead into a soft smooth dough, adding more flour if
neeeded. Divide into 2 pieces. Roll each piece into a 9 x13
rectangle. Place a pie of rolled dough in pan. Add cooled
filling if cooked or 2 cans of the canned pie filling. Add
top crust and carefully seal edges. Ler rise 1 hour.Bake
350 for 35 minutes. Cool to room temperature. If top crust
buckles when removed from oven, lay a tea towel over crust
while cooling. this trick, flattens out the crust. Cut into
squares when cold. sprinkle with powdered sugar if desired.
For filling: Combine all ingredients well and cook and stir
over medium heat until thickened. Remove from heat to cool.
