Adult Egg Salad
Adult Egg Salad
Yield: 4 servings
1 Tbsp. unsalted butter
1 large shallot, quartered
1 large shiitake or porcini mushroom, roughly chopped
1 Tbsp. salami, finely chopped
6 hard boiled eggs, shelled and chopped
1 Tbsp. mayonnaise
1 tsp. chives, chopped
salt and pepper, to taste
Melt butter in a small frying pan over a medium low heat. Add the shallot
and mushroom. Cook until golden, about 5 minutes. Remove from pan and
finely chop. In the same frying pan, saute the salami until crisp.
In a medium bowl, combine the eggs with the chopped shallot, mushroom and
salami with the residual drippings from the frying pan. Add the mayonnaise
and chives. Mix well. The salad will be relatively dry. Season to taste
with salt and pepper.
