Curried Waldorf Egg Salad

12 large eggs hard boiled
1 large red apple washed, skin on, chopped
1/2 cup chopped nuts ( walnuts,or cashews, pecans , almonds etc. )
1/2 cup raisins ( dark or light) or 1/2 cup dried cranberries
2 Tbsp. minced red onion
1 small stalk fine chopped celery ( optional )
Enough mayonnaise to bind everything
salt and pepper to taste
1 to 2 tsp. curry powder or to taste
I made this for a buffet and then received many requests for the recipe
since it was not the standard egg salad most people expect. Mix
everything together and chill well several hours before serving. 10 to 12
servings, great for buffet. Use also to stuff ripe tomatoes or scoop onto
lettuce leaf cups.
