Egg, Bacon and Pineapple Salad
Yield: 10 servings
10 eggs, hard boiled and diced
125 g (4.5 oz.) pineapple chunks
125 g (4.5 oz.) smoked streaky bacon, cooked and diced
50 g (2 oz.) onion, diced
125 g (4.5 oz.) mushrooms, sliced and cooked
125 g (4.5 oz.) bean sprouts
seasoning, to taste
250 ml (9 oz.) mayonnaise
Place all the ingredients in a mixing bowl, season and mix the mayonnaise
through.
Serve chilled.
