Egg Salad No. 2317

i'm in need of a decent egg salad recipe. just plain old egg
salad. i've been all over the web & can't find ANY kind of egg salad
recipe. none of my cookbooks have it. is this supposed to just be
something you KNOW? please email me and also post here. thanks...

I guess "everyone" knows how to make this -- that's probably why no two
people make exactly the same dish and call it "Egg Salad". Anyway,
here's one version:

Egg Salad No. 2317 Yields 4 Servings

2/3 Cup Mayonnaise Chopped Fine
2 Tbls Lemon Juice 8 Hard Cooked Eggs,
2 tsp Vinegar Diced
1 Tbls Chives, Chopped Fine 4 Crisp Outer Leaves of
1 1/2 tsp Dried Dill, Crumbled Iceberg Lettuce
1/8 tsp Black Pepper, Ground 1 Head Bibb or Boston Lettuce
- Salt 2 Sprigs Watercress
1/3 Cup Green Bell Pepper,
Cored, Seeded &

All ingredients must be well chilled before starting.
Combine the mayonnaise, lemon juice, vinegar, chives, dill and pepper.
Blend thoroughly.
Add salt to taste.
Add the green bell peppers and eggs.
Toss gently to mix.
Arrange one leaf of lettuce on each salad plate.
Make a bed of additional leaves of lettuce and watercress.
Divide the egg salad equally between the dishes.
Top each with additional lettuce.
