Fannie Farmer Egg Salad

Title: EGG SALAD

2/3 c Mayonnaise
2 T Lemon juice
2 ts Vinegar
1 T Chives; finely chopped
1 T Dill fresh; chopped
1/2 ts Pepper
Salt
1/2 c Bell pepper, green; finely
-chopped
8 Egg, hard-cooked; diced
4 Iceberg lettuce, outer leaf
1 Boston lettuce
Watercress
Combine the mayonnaise, lemon juice, vinegar, chives, dill, and
pepper. Mix until well blended, and add salt to taste. Add the bell
pepper and eggs; gently toss to mix. Arrange one lettuce leaf on
each salad plate and make a bed of lettuce leaves and watercress
(reserving a few leaves for garnish). Put a portion of egg salad on
each lettuce bed.
