Bubble and Squeak

Cooking School Cookbook:
Bubble and Squeak
an old fashioned English supper dish
Put in layers in a casserole
1 pound cooked sausage meat
2 cups cooked chopped cabbage
Pour over the top
2 cups cream sauce (see below)
Sprinkle with
bread crumbs
Bake at 350 degrees F. for 30 minutes
serves 4 to 6

Cream Sauce
Melt in a double boiler or a small heavy sauce pan
1/4 cup butter
stir in
1/4 cup flour
Blend well over low heat. Stir in
2 cups cold milk or milk and cream
Bring slowly to boil whisking continuously. Cook 2 minutes
more whisking constantly. Season to taste with salt and
pepper.
Makes 2 cups.
