Barbecue Meatloaf

If you ever were unfortunate enough to have eaten my mother's meatloaf, then you would grow to groan
when she made it, for she made it rather dry. Fortunately I came across this recipe from the
"Premium" edition of the Yankee Main Dish Church Supper Cookbook, the free cookbooklet that I got
for subscribing to Yankee.

Barbecue Meatloaf

INGREDIENTS FOR 6 SERVINGS:
1 minced onion
1-1/2 tablespoons butter
1-1/2 pounds ground beef (or turkey !)
1/2 cup fresh bread crumbs
1 whole egg
1/2 cup tomato sauce
1-1/2 teaspoon salt
1/4 teaspoon pepper

INSTRUCTIONS:
Sauté onion in butter until soft.
Combine with other ingredients and mix well.
Form into a loaf and place into a 10"x14" baking pan. Pour  1/2
Cup Barbecue Sauce over loaf and bake for 1 hour at 350°F,
basting periodically with remaining sauce.

Note: Although the recipe says it serves 6, you may find that it
serves less if you love it as much as I do. The sauce makes the
big difference.

1-1/2 cups tomato sauce
1/2 cup water
2 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons prepared mustard
2 teaspoons Worcestershire sauce

INSTRUCTIONS:
Combine ingredients in saucepan and heat until well blended,
stirring.

Use for Barbecue Meatloaf and whatever else you may want.
