Bubble and Squeak
All you do is take all your leftover vegetables and potato -
traditonally cabbage and potato only, but we use up everything (you do really need about
half veg and half potato)- chop it all up small and mix well together preferably in a food
processor if you have one. Season to taste with salt and pepper.
Heat some oil in a frying pan, put the veg/potato mixture in and pat it out flat to fit
the pan. Fry over moderate heat, stirring over the sides to the middle so that everything
is well heated through. Its done when both sides are nicely crispy and golden.
Serve with cold meats and pickles, or fried eggs - its delicious and so simple even my
husband can make it (provided I cut everything up for him!!)
