Chicken Marsala
Coincidentally, I made this last night.
Saute chicken in garlic flavored olive oil (use a very small amount). Remove chicken to a
warm plate. Deglaze pan with a mixture of 1/2 cup of sweet marsala, the juice and
zest of a large lemon and 1/4 cup of chicken broth. Reduce mixture by half over high
heat. Salt and pepper to taste. Lower heat and return chicken to pan for a moment. serve
with rice. Bon appetite'
