Chicken Tarragon
Chicken Tarragon (a favorite in my house)
Debone chicken and cut meat in bite size peices. Lightly coat with flour and saute
with sliced garlic, pepper and butter. Add chicken broth to cover plus some and toss
in some chopped tarragon (to taste)along with 1/2 tsp of dried mustard. Reduce
quickly, add more tarragon, and serve over potato squares with onion cooked hot on the
stovetop to brown in a small amount of veggie oil and seasoned with season salt and
pepper.
