Hash Brown Bake
3 cups frozen hash browns
3/4 cup Monterey Jack cheese with jalapeno's or plain if desired 1 cup diced cooked
ham or Canadian bacon
1/4 cup diced green onions
4-6 eggs
Salt and pepper to taste
Grease a 2 quart baking dish. Layer the potatoes, sprinkle each layer with cheese, ham and
onions ending with cheese. Mix eggs and pour over the potatoes. Can be covered with
plastic wrap and refrigerated overnight. Bake 350: 40-45 minutes or until set. Let
stand about 5 minutes before serving.
