Lamb Patties with Tomato and Mint Salsa
Great on the BBQ, grilled or pan-fried. Can be made a day ahead; can be
frozen. Easy for a beginner. Works with any ground meat.
1 kg minced lamb
1 cup stale breadcrumbs (I made some from old bread)
1 onion, finely chopped
2 cloves garlic, crushed
2 eggs, lightly beaten
1/4 cup chopped fresh mint
15 grinds black pepper
1/2 tsp Salt (more to taste)
Combine everything and mix well. Divide into 12 portions, roll each into a
ball, flatten slightly. Cook - any method - until browned and cooked
through.
TOMATO and MINT SALSA
3 large tomatoes (350g), chopped small
1 small onion, chopped (I also added some spring onion tops.)
2 tablespoons chopped fresh mint
Salt to taste
Combine in a bowl, mix well.
QUICK YOGHURT DRESSING
Combine 1/2 cup thick yoghurt, 1 clove minced/crushed garlic, salt and pepper.
SERVING SUGGESTIONS
As is off the BBQ or skillet, salsa and dressing on the side
On a hamburger bun with lettuce
Rolled in a warm pita with the salsa and dressing
