Leg of Lamb

This is a simple recipe that I prepare for my one-year old.  Trim any excess fat off the leg (lamb fat stinks when it is cooked) Place the lamb leg in a pot, and add enough water to cover the lamb.  Add 1 1/2 tsp of salt, 1 TB of basil, and 3 TB of dried mint.  Peel a couple of carrots,slice them and put them in the pot.  This last step sounds kind of questionable but it works. Simmer the lamb for 3 hours.  The long simmering will make the meat very tender.
