Pork Roast

My mother in laws recipe for italian porkette is "THE BEST" First, put a big sauce pan on the stove with water, a bunch of rosemary and garlic cloves.  bring to boil then simmer.
Next, stab the roast all over and insert garlic cloves in holes.  Rub with olive oil,fresh ground black pepper and paprika.  Put in open roasting pan and cook for one hour at 475.  Then turn heat to 425 pour one ladle of saucepan juice onto roast and cook with lid on until falling apart.  Put juice on about every 15 mins.  When the roast is done put remainder of juice on wire strainer and smush garlic over the roast through the strainer.  ENJOY!
