Venison
I usually take the hind quarters and debone them. Soak in
Milk (whole if
possible) and cheap red wind (not Rose) for 24 hours. This will tnederise and
remove any game smell or taste. Remove and pat dry. Cover with thick sliced bacon (game
has no real fat and what it does it not what you want so remove all that you can) by
pinning ti to the roast with tooth picks. Add a large amount of honey to your gavortie bbq
sauce. Apply over bacon covered ham. Honey will cristalize and hold in moisture. Smoke for
9 hours and finsih in oven. If you have a real smoker. If not keep away from direct heat
and smoke as long as possible without overcooking parts. Possible to do all in oven. Cook
over lowest possible heat. 150-175 works best. Will be tneder and moist. enjoy. Have
served to over 1000 people in texas.
