Zucchini Casserole
Here's a recipe that my sister gave to me. I'm not much of a veggie eater, but
this is GREAT!
Zucchini Casserole
1 stick butter or margarine
2-3 zucchini, sliced medium
2 med. onions, sliced thin
2-3 tomatoes, sliced
1 box homestyle seasoned croutons
2 cups grated Mozzerella cheese
basil
Saute zucchini and onions in butter until softened. Add box of croutons; continue
cooking for 3-5 minutes. Croutons should be slightly soft, but not mushy. In a
3 qt. casserole (sprayed w/ nonstick spray), transfer half of the zucchini mixture.
Top with half of the tomato slices, then half of the cheese. Sprinkle with
basil. Repeat steps. Bake at 350 for about 30 minutes...I use the cheese being
lightly browned as a guide. Delicious!
