Kentucky Fried Chicken

This is Gloria Pitzer's ( recipe detective 0 version and
its quite good). Please send me any favorite recipe of
yours . I love desserts, bread or any ethnic recipe...Joan
 
Kentucky Fried chicken
3 pounds chicken parts
2 pkgs, Good seasonings Italian dressing salad mix
3 tbs flour
2 tsp salt
1/4 cup lemon juice
2 tbs butter or margarine
8 0z corn oil
2/3 cup crisco shortening
1 cup milk
1 1/2 cups boxed pancake mix combined with:
1 tsp paprika
1/2 tsp powdered sage
1/4 tsp pepper
 
Wipe chicken dry. make a paste of the first 5 ingredients.
Brush to coat chicken with paste.Cover skin side and
underside as well. Stack pieces in refrigerator container.
Cover and seal with foil. Refrigerate several hours or
ovenight if possible.1 1/2 hours before serving, heat corn
oil and crisco till melted in heavy saucepan. Put just
enough of this into 2 heavy skillets so that it covers
bottom of pans at least 1 inch deep.Dip each piece of
chicken in milk and then in the pancake mixture. Shake off
excess. Place skin side down in hot oil mixtureBrown pieces
on each side till golden. Place browned pieces in a shallow
baking pan, skin sideup.Spoon remaining milk over pieces.
Seal with foil, leaving one side unsealed.Bake 40 minutes
at 375 or chicken is fork tender. Remove foil and bake 8 to
10 minutes longer until coating is crisp. baste with milk
and pan drippings every few minutes.
Gloria Pitzers writes that she had spoken to the colonel
and he had given her the tips to make the chicken. his
spices were secret but very close to the above. he
origianlly used peanut oil to fry but the above is fine
too. Make sure oil is hot enough or the coating will fall
off the chicken.
