Syrup
2 cup water
1/2 cup Honey
1 cup sugar
1/2 stick cinnamon
1 whole clove
Combine all ingredients in saucepan and bring to a boil. Lower heat, cover and
simmer 20 min.
Remove from heat and cool.
Filling
1 qt milk
1/2 cup sugar
1/2 cup unsalted butter
1/2 cup semolina (pasta flour)
6 eggs
1 tsp vanilla extract
Combine milk and sugar in deep sauce pan and heat over low until scalded. DO NOT
ALLOW TO BOIL. Add butter and stir until melted. Add semolina in a steady
stream, stirring with a whisk to prevent lumps. Cook until mixture begins to
thicken. Beat eggs until frothy and fold into milk mixture.
Filo
1-1/2 pkg Filo
1/2 lb unsalted butter(melted)
Defrost filo according to pkg directions. Brush a 12x9 baking pan with butter
and lay 1 sheet filo on top. Brush filo with butter and top with another sheet
until you have layered 10 sheets. Filo should be over lapping the pan. Pour 1/2
of custard iver filo and bring edges of filo over custard. Repeat this process
until all custard is used and making sure that top layer is a fill layer of
buttered filo.
Bake at 325 about 45 min or until golden brown. Let stand 5 min before pouring
syrup on it. Set aside for 6 hours before serving. Serves 12
