Dons BBQ Gouper
Grilled Grouper with Lemon Curry Sauce and Coconut Rice
Serves 4
Four 7-ounce grouper filets
Lemon Curry Sauce (recipe below)
Coconut Rice (recipe below)
Salt to taste
Pepper to taste
Oil to taste
Steamed julienne vegetables (optional)
Season the grouper filets with salt and pepper and brush with oil to
help keep them from sticking. Grill the grouper and serve over
steamed julienne vegetables with Coconut Rice. Top with the Lemon
Curry Sauce.
LEMON CURRY SAUCE
2 ounces minced shallots
1 cup white wine
1 cup fish stock
1 cup whipping cream
1/2 teaspoon hot curry powder
1/2 teaspoon mild curry powder
1/2 cup coconut milk
1 lemon, juice only
Combine all the sauce ingredients except for the lemon juice and
reduce until it coats the back of a spoon. Add in the lemon juice and
adjust the seasoning to taste. Keep warm until ready to serve.
COCONUT RICE
Serves 4 - 6
2 tablespoons butter
2 cloves minced garlic
2 teaspoons minced fresh ginger
1 1/2 cups basmati rice
1 cup coconut milk
1 1/2 cups hot chicken stock
Salt to taste
Pepper to taste
Heat the butter in a heavy saucepan over medium heat. Add the garlic
and ginger and soften, but do not brown. Add the rice and stir until
all the grains are coated. Add the coconut milk, water and
seasonings. Bring to a boil and reduce the heat. Cover the pan and
cook for 18-20 minutes until all the liquid is absorbed. Remove from
heat and let stand for about 1 minute. Fluff with a fork and serve
immediately.
